Instructions
- Heat 2 tablespoons of oil in a large pan over medium-high heat.
- Coat the chicken with corn starch and season with salt and pepper, then cook in the pan until browned.
- Remove the chicken and keep warm.
- Add 1 teaspoon of oil, then cook the onion and carrots until softened.
- Add garlic and cook briefly, then remove and keep warm.
- Add the remaining oil, then scramble the eggs in the pan.
- Stir in the cooked rice, chicken, and vegetables, mixing in fish sauce, soy sauce, and sugar.
- Cook until everything is heated through, then serve garnished with green onions, cucumbers, cilantro, and tomatoes.
