Ingredients

  • 2 tablespoons vegetable oil
  • ¾ pound boneless skinless chicken breasts
  • 2 tablespoons corn starch
  • ½ cup onion
  • ½ cup carrots
  • 2 teaspoons minced garlic
  • 2 eggs lightly beaten
  • 3 cups cooked white rice
  • 3 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • to taste salt and pepper
  • ¼ cup green onions

For garnish

  • to taste sliced cucumbers
  • to taste cilantro leaves
  • to taste tomato wedges

Instructions

  1. Heat 2 tablespoons of oil in a large pan over medium-high heat.
  2. Coat the chicken with corn starch and season with salt and pepper, then cook in the pan until browned.
  3. Remove the chicken and keep warm.
  4. Add 1 teaspoon of oil, then cook the onion and carrots until softened.
  5. Add garlic and cook briefly, then remove and keep warm.
  6. Add the remaining oil, then scramble the eggs in the pan.
  7. Stir in the cooked rice, chicken, and vegetables, mixing in fish sauce, soy sauce, and sugar.
  8. Cook until everything is heated through, then serve garnished with green onions, cucumbers, cilantro, and tomatoes.
