Instructions
- Heat olive oil in a large nonstick skillet over medium heat.
- Add the chopped onion and cook until it starts to soften.
- Stir in the sliced mushrooms and broccoli, cooking until the broccoli is crisp-tender.
- Add minced garlic and cook until fragrant.
- Add the chilled rice, stirring frequently for 3 to 4 minutes until heated through.
- Remove from heat and stir in peanuts and soy sauce.
- Serve with desired garnishes.
