Thai Fried Rice

Ingredients

The rice

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 8 ounces baby bella mushrooms, sliced
  • 4 cups bite-sized broccoli florets
  • 5 cloves garlic, minced
  • 5 cups cooked jasmine rice, chilled
  • ½ cup peanuts, roughly chopped
  • 2 tablespoons low sodium soy sauce or tamari

For serving

  • to taste thinly sliced green onions
  • to taste thinly sliced cucumber
  • to taste extra chopped peanuts
  • to taste lime wedges
  • to taste sriracha

Instructions

  1. Heat olive oil in a large nonstick skillet over medium heat.
  2. Add the chopped onion and cook until it starts to soften.
  3. Stir in the sliced mushrooms and broccoli, cooking until the broccoli is crisp-tender.
  4. Add minced garlic and cook until fragrant.
  5. Add the chilled rice, stirring frequently for 3 to 4 minutes until heated through.
  6. Remove from heat and stir in peanuts and soy sauce.
  7. Serve with desired garnishes.
