Instructions
- 1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.
- 2. Place the phyllo shells on the baking sheet.
- 3. In a mixing bowl, beat the cream cheese and sugar until smooth.
- 4. Add the egg white and mix until combined.
- 5. Stir in the pumpkin, vanilla extract, and pumpkin pie spice until well combined.
- 6. Spoon the pumpkin mixture evenly into the phyllo shells.
- 7. Bake for 12-15 minutes until the edges of the shells are golden and the filling is heated through.
