Ingredients

The mixture

  • ½ cup nut butter
  • ¼ cup pumpkin puree
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ cup coconut flour
  • 1 tbsp pumpkin pie spice
  • ¼ tsp salt (if nut butter isn’t salted)
  • ½ cup mini chocolate chips

The chocolate coating

  • 1 cup melted chocolate for dipping

Instructions

  1. Mix together nut butter, pumpkin puree, maple syrup, and vanilla in a large bowl.
  2. Add coconut flour, pumpkin pie spice, and salt, then stir until combined.
  3. Stir in mini chocolate chips and place the mixture in the fridge for ten minutes.
  4. While the mixture is chilling, melt the chocolate for dipping, adding a teaspoon of coconut oil if desired.
  5. Roll the chilled mixture into balls and dip them in the melted chocolate.
  6. Place the dipped bites in the fridge or freezer to harden.
