Instructions
- Process the sunflower seeds in a food processor until they become a fine flour.
- Add the dates, coconut, pumpkin, vanilla, cinnamon, ginger, nutmeg, and salt to the processor and blend until a sticky dough forms.
- Taste the dough and adjust sweetness or spice as desired.
- Use a one-inch cookie scoop to drop the dough onto a lined baking sheet, forming about 24 balls.
- Freeze the balls for about 2 hours until firm.
- Serve chilled for the best texture, and store in an airtight container in the freezer for up to 6 months.
