Ingredients

  • 1 cup hulled sunflower seeds
  • 1 cup dates, pitted (about 7 ounces)
  • ½ cup unsweetened shredded coconut
  • ¼ cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • pinch nutmeg
  • pinch salt

Instructions

  1. Process the sunflower seeds in a food processor until they become a fine flour.
  2. Add the dates, coconut, pumpkin, vanilla, cinnamon, ginger, nutmeg, and salt to the processor and blend until a sticky dough forms.
  3. Taste the dough and adjust sweetness or spice as desired.
  4. Use a one-inch cookie scoop to drop the dough onto a lined baking sheet, forming about 24 balls.
  5. Freeze the balls for about 2 hours until firm.
  6. Serve chilled for the best texture, and store in an airtight container in the freezer for up to 6 months.
