Ingredients

  • 2 cups oats
  • ½ cup canned pumpkin puree
  • ¼ cup almond butter or peanut butter
  • ¼ cup chia seeds
  • ¼ cup pumpkin seeds
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)
  • ½ cup maple syrup or honey
  • a generous pinch salt
  • ½ cup dark chocolate chips

Instructions

  1. 1. Pulse all ingredients except the chocolate chips in a food processor until well mixed.
  2. 2. Add chocolate chips and pulse a few more times until they are in small pieces.
  3. 3. Scoop the mixture and roll it into balls.
  4. 4. Freeze until solid and store in the freezer or refrigerator.
