Ingredients

Base Ingredients

  • cups old-fashioned rolled oats
  • ½ cup pumpkin puree
  • ½ cup natural peanut butter
  • cup maple syrup
  • ¼ teaspoon cinnamon
  • ½ teaspoon pumpkin pie spice
  • pinch kosher salt

Seeds and Chips

  • 2 tablespoons ground flaxseeds
  • 2 tablespoons chia seeds
  • 2 tablespoons hemp seeds
  • cup mini chocolate chips

Instructions

  1. Prepare a rimmed baking sheet by lining it with parchment paper or a silicone mat.
  2. In a large bowl, combine all the ingredients and mix until well combined to form a thick, sticky batter.
  3. Scoop about a heaping tablespoon of the mixture and roll it into a small ball using your palms.
  4. Place the formed balls on the prepared baking sheet and repeat until all the dough is used.
  5. Refrigerate for a couple of hours or freeze for about 1 hour to set before enjoying.
