Ingredients

The base

  • 8 oz chopped dates
  • ¼ cup honey
  • ¼ cup pumpkin puree
  • 1 Tbsp chia seeds or flax seeds
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • pinch salt

The mix-ins

  • 1 cup old-fashioned oats
  • 1 cup toasted coconut flakes
  • 1 cup toasted pepitas

Instructions

  1. Combine dates, honey, pumpkin puree, chia or flax seeds, cinnamon, ginger, nutmeg, and salt in a food processor and pulse until smooth.
  2. Transfer the mixture to a bowl and stir in oats, coconut flakes, and pepitas until well combined.
  3. Cover and refrigerate for at least 30 minutes.
  4. Once cool, shape the mixture into 1-inch balls or press into a baking pan to cut into bars.
  5. Store in the refrigerator for up to 2 weeks.
