Instructions
- Combine dates, honey, pumpkin puree, chia or flax seeds, cinnamon, ginger, nutmeg, and salt in a food processor and pulse until smooth.
- Transfer the mixture to a bowl and stir in oats, coconut flakes, and pepitas until well combined.
- Cover and refrigerate for at least 30 minutes.
- Once cool, shape the mixture into 1-inch balls or press into a baking pan to cut into bars.
- Store in the refrigerator for up to 2 weeks.
