Instructions
- Soak dry dates in hot water for 10 minutes if hard, then drain.
- Pulse dates in a food processor until they form a sticky ball.
- Add oats, pecans, pumpkin, maple syrup, chia seeds, pumpkin pie spice, vanilla extract, maple extract, and salt to the processor and pulse until combined.
- Taste the mixture and add more maple syrup if desired.
- Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes.
- Scoop the mixture and roll it into balls.
- Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 2 months.
