Ingredients

The base

  • 1 cup pitted Mejool dates
  • 1 cup old fashioned rolled or quick oats
  • ¼ cup pumpkin puree
  • 1 tablespoon pure maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon pure vanilla extract
  • teaspoon kosher salt

The mix-ins

  • ¼ cup toasted pecan halves
  • 2 ¼ teaspoons pumpkin pie spice
  • ¼ teaspoon maple flavor or maple extract (optional)

Instructions

  1. Soak dry dates in hot water for 10 minutes if hard, then drain.
  2. Pulse dates in a food processor until they form a sticky ball.
  3. Add oats, pecans, pumpkin, maple syrup, chia seeds, pumpkin pie spice, vanilla extract, maple extract, and salt to the processor and pulse until combined.
  4. Taste the mixture and add more maple syrup if desired.
  5. Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes.
  6. Scoop the mixture and roll it into balls.
  7. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 2 months.
