The coating

chocolate chips, dried cranberries, chopped dates, coconut flakes, or chopped nuts
Instructions
- Combine oats, pumpkin puree, maple syrup, ground flaxseed, peanut butter, protein powder, pumpkin pie spice, and cinnamon in a mixing bowl.
- Mix until well incorporated and slightly sticky; adjust with extra oats if too wet.
- Line a baking sheet with parchment paper.
- Scoop mixture and roll into balls, placing them on the parchment paper.
- Melt white chocolate chips and coconut oil in the microwave, stirring between increments.
- Drizzle melted chocolate over the balls.
- Chill in the fridge for about 30 minutes or in the freezer for 10 minutes to set.
