Ingredients

The base

  • 2 ¼ cups old fashioned or rolled oats
  • ½ teaspoon fine sea salt
  • 1 teaspoon pumpkin spice
  • ¼ cup chia seeds
  • ½ cup pumpkin puree
  • ¼ cup organic peanut butter
  • ¼ cup maple syrup

The mix-ins

  • cup vegan chocolate chips

Instructions

  1. Grind the oats in a food processor until finely ground.
  2. Add all other ingredients except for the chocolate chips and mix until a thick dough forms.
  3. Incorporate the chocolate chips by pulsing a few times.
  4. Roll the mixture into balls using a tablespoon measure.
  5. Chill the balls in the fridge for at least an hour before serving.
