Ingredients

The base

  • 2 cups gluten free rolled oats
  • ¼ cup ground flax seed
  • 1 tablespoon chia seeds
  • ½ cup dry dates
  • ¼ cup almond butter
  • ¾ cup pumpkin puree
  • 1 scoop vanilla protein powder
  • teaspoons pumpkin pie spice
  • ¼ cup water

Optional ingredients

  • cup dried cranberries

Instructions

  1. Add oats, dates, flax, chia seeds, almond butter, pumpkin puree, protein powder, and pumpkin pie spice to a food processor and pulse until the mixture starts to stick together.
  2. Pour in ¼ cup of water and pulse until the mixture is sticky enough to form balls.
  3. Transfer the mixture to a bowl and optionally fold in dried cranberries.
  4. Form the mixture into small 1-inch balls and place them on a parchment-lined baking sheet.
  5. Cover and refrigerate for 2 hours before serving.
