Ingredients

The base

  • ½ cup crushed hard cookies or graham crackers
  • 2 tablespoons unflavored pea protein powder
  • 1 ½ teaspoons pumpkin spice
  • ¼ teaspoon sea salt

The binding ingredients

  • ¼ cup almond butter
  • 2 tablespoons maple syrup
  • 2 tablespoons pumpkin puree
  • 2 tablespoons chopped pecans

Instructions

  1. Combine the crushed cookies, pea protein or oat flour, pumpkin spice, salt, and pecans in a bowl.
  2. Add the almond butter, maple syrup, and pumpkin to the bowl and mix well.
  3. Chill the mixture while cleaning up.
  4. Roll the mixture into balls.
  5. Optionally, roll the balls in extra crushed cookies for a crust.
