Instructions
- Combine the crushed cookies, pea protein or oat flour, pumpkin spice, salt, and pecans in a bowl.
- Add the almond butter, maple syrup, and pumpkin to the bowl and mix well.
- Chill the mixture while cleaning up.
- Roll the mixture into balls.
- Optionally, roll the balls in extra crushed cookies for a crust.
