Ingredients

  • 2 cups rolled oats
  • ½ cup pumpkin seeds
  • 1 cup hemp seeds
  • ½ cup cacao nibs
  • 1 cup pecans
  • ½ cup goji berries
  • cups dates
  • 1 teaspoon vanilla extract
  • pinch sea salt
  • ½ - ¾ cup water
  • ½ cup unsweetened shredded coconut

Instructions

  1. Combine oats, pumpkin seeds, hemp seeds, cacao nibs, and pecans in a large bowl.
  2. Soak goji berries in warm water for 5 minutes, then drain and add to the bowl.
  3. In a food processor, blend dates, vanilla extract, salt, and water until partially smooth.
  4. Add the date mixture to the bowl and mix everything together until a dough-like consistency forms.
  5. Roll the mixture into 1-inch balls or press into a lined baking pan to make bars.
  6. If desired, roll the balls in shredded coconut to coat.
