Instructions
- Combine oats, pumpkin seeds, hemp seeds, cacao nibs, and pecans in a large bowl.
- Soak goji berries in warm water for 5 minutes, then drain and add to the bowl.
- In a food processor, blend dates, vanilla extract, salt, and water until partially smooth.
- Add the date mixture to the bowl and mix everything together until a dough-like consistency forms.
- Roll the mixture into 1-inch balls or press into a lined baking pan to make bars.
- If desired, roll the balls in shredded coconut to coat.
