Pumpkin Protein Balls

Instructions
- Combine the almonds, pumpkin pie spice, coconut oil, pumpkin puree, and dates in a food processor and blend until well combined.
- Transfer the mixture to a bowl and roll it into about 15 balls, each about 1-1/2 inches in diameter.
- Roll each ball in shredded coconut until lightly covered.
- Chill the balls in the refrigerator for at least 2-3 hours before serving.
