Ingredients

The base

  • 1 1/4 cups raw or blanched almonds
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon coconut oil
  • 1/3 cup pure pumpkin puree
  • 8-9 pieces pitted Medjool dates
  • 2 scoops collagen protein powder

For rolling

  • 1/4 cup unsweetened dried shredded coconut

Instructions

  1. Combine the almonds, pumpkin pie spice, coconut oil, pumpkin puree, and dates in a food processor and blend until well combined.
  2. Transfer the mixture to a bowl and roll it into about 15 balls, each about 1-1/2 inches in diameter.
  3. Roll each ball in shredded coconut until lightly covered.
  4. Chill the balls in the refrigerator for at least 2-3 hours before serving.
