Grilled Pumpkin Pie Bites

Ingredients

The filling

  • 1 can pumpkin puree
  • 1 can evaporated milk
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ¾ cup brown sugar
  • ¼ tsp ground ginger
  • ¼ cup ricotta cheese
  • 2 units eggs

The shells

  • 40 units Mini Phyllo Dough Shells

Instructions

  1. Mix all the filling ingredients in a large bowl.
  2. Fill the phyllo shells to the top with the mixture.
  3. Lightly spray a cookie baking dish and place the filled shells on it.
  4. Position the baking dish on the coolest part of the grill for indirect heat.
  5. Cook for about 10 to 12 minutes, checking halfway to avoid over-browning.
  6. Serve warm or let cool; they are also good the next day.
