Banana Bread Pudding

Ingredients

The custard

  • 1 ½ cups unsweetened plant milk
  • ¼ cup cornstarch
  • 1 can coconut cream
  • ½ cup maple syrup
  • ½ tablespoon cinnamon
  • 1 teaspoon salt
  • 1 ½ teaspoons vanilla extract

The filling

  • 1 ½ cups chopped walnuts
  • 2 tablespoons vegan butter
  • 2 tablespoons coconut sugar
  • ½ teaspoon cinnamon

The bread and fruit

  • 1 pound ciabatta, cubed and left to dry out
  • 3 pieces bananas, sliced thin

Instructions

  1. Grease two loaf pans with non-stick baking spray.
  2. Blend the plant milk, cornstarch, coconut cream, maple syrup, cinnamon, salt, and vanilla until smooth.
  3. Transfer the mixture to a saucepan, bring to a boil, then reduce heat and simmer until thickened.
  4. Mix the walnuts, melted vegan butter, coconut sugar, and cinnamon in a bowl.
  5. Layer ¼ of the bread in one loaf pan, drizzle with 1 cup of custard, add half of the bananas and walnut filling, then repeat with more bread and custard.
  6. Let the assembled pudding rest for 1 hour.
  7. Preheat the oven to 375°F (190°C).
  8. Bake for 50 minutes until set.
  9. Allow to cool for 10 minutes before serving.
