Banana Bread Pudding

The bread and fruit

ciabatta, cubed and left to dry out

bananas, sliced thin
Instructions
- Grease two loaf pans with non-stick baking spray.
- Blend the plant milk, cornstarch, coconut cream, maple syrup, cinnamon, salt, and vanilla until smooth.
- Transfer the mixture to a saucepan, bring to a boil, then reduce heat and simmer until thickened.
- Mix the walnuts, melted vegan butter, coconut sugar, and cinnamon in a bowl.
- Layer ¼ of the bread in one loaf pan, drizzle with 1 cup of custard, add half of the bananas and walnut filling, then repeat with more bread and custard.
- Let the assembled pudding rest for 1 hour.
- Preheat the oven to 375°F (190°C).
- Bake for 50 minutes until set.
- Allow to cool for 10 minutes before serving.
