Bananas Foster Bread Pudding

Instructions
- Preheat the oven to 400°F and prepare a baking sheet with aluminum foil and non-stick spray.
- Slice 3 bananas to make about 2 cups and mix them with melted butter, brown sugar, and cinnamon.
- Spread the banana mixture on the baking sheet and bake for 15 minutes until bubbly.
- Reduce the oven temperature to 350°F.
- In a bowl, mix milk, heavy cream, eggs, egg yolks, salt, sugar, vanilla, rum flavoring, and cinnamon.
- Spray a 9x13 inch dish with non-stick spray and layer half of the bread cubes in the bottom.
- Spread the caramelized bananas over the bread, add sliced banana, and top with remaining bread cubes.
- Pour the egg mixture over the bread and let it soak for 10-15 minutes.
- Dot with chopped butter and bake for 40-50 minutes until golden and set.
