Bananas Foster Bread Pudding

Ingredients

  • 6 c. stale bread or croissant cubes
  • 4 medium bananas, divided
  • 4 large eggs
  • 3 large egg yolks
  • 1 ½ c. milk
  • 1 ½ c. heavy cream
  • 1 c. brown sugar, divided
  • ¼ tsp. kosher salt
  • 1 tsp. vanilla extract
  • 1 ½ tsp. rum flavoring (optional)
  • 1 tsp. cinnamon, divided
  • 2 Tbsp. butter, divided

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with aluminum foil and non-stick spray.
  2. Slice 3 bananas to make about 2 cups and mix them with melted butter, brown sugar, and cinnamon.
  3. Spread the banana mixture on the baking sheet and bake for 15 minutes until bubbly.
  4. Reduce the oven temperature to 350°F.
  5. In a bowl, mix milk, heavy cream, eggs, egg yolks, salt, sugar, vanilla, rum flavoring, and cinnamon.
  6. Spray a 9x13 inch dish with non-stick spray and layer half of the bread cubes in the bottom.
  7. Spread the caramelized bananas over the bread, add sliced banana, and top with remaining bread cubes.
  8. Pour the egg mixture over the bread and let it soak for 10-15 minutes.
  9. Dot with chopped butter and bake for 40-50 minutes until golden and set.
