Ingredients

  • 1 ½ cups whole wheat or all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup melted coconut oil or other oil
  • ¼ cup unsweetened applesauce
  • ¼ cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups shredded zucchini
  • ½ cup miniature chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with paper liners, greasing them lightly.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
  3. In another bowl, mix the oil, applesauce, buttermilk, egg, and vanilla.
  4. Combine the wet ingredients with the dry ingredients, stirring gently until just combined.
  5. Squeeze excess moisture from the zucchini and fold it into the batter along with the chocolate chips.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 17-18 minutes until the tops spring back when touched.
  8. Cool the muffins on a rack before serving.
