Instructions
- Preheat the oven to 350°F and line a muffin tin with paper liners, greasing them lightly.
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, mix the oil, applesauce, buttermilk, egg, and vanilla.
- Combine the wet ingredients with the dry ingredients, stirring gently until just combined.
- Squeeze excess moisture from the zucchini and fold it into the batter along with the chocolate chips.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 17-18 minutes until the tops spring back when touched.
- Cool the muffins on a rack before serving.
