Ingredients

  • 2 cups shredded, unpeeled zucchini
  • ½ cup mashed ripe banana
  • ¼ cup coconut oil
  • ¼ cup honey
  • ¼ cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • 2 cups white whole wheat flour
  • cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a mixing bowl, beat together banana, honey, brown sugar, coconut oil, and vanilla until smooth.
  4. Add eggs and mix until combined.
  5. Sprinkle in cinnamon, baking soda, baking powder, and salt, then mix.
  6. Fold in the flour, zucchini, and chocolate chips.
  7. Scoop the batter into the muffin cups and fill them ¾ full.
  8. Bake for 20-25 minutes until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.
