Instructions
- Preheat the oven to 375°F and prepare a muffin tin.
- Grate the zucchini and squeeze out excess moisture.
- In a mixing bowl, beat together banana, honey, brown sugar, coconut oil, and vanilla until smooth.
- Add eggs and mix until combined.
- Sprinkle in cinnamon, baking soda, baking powder, and salt, then mix.
- Fold in the flour, zucchini, and chocolate chips.
- Scoop the batter into the muffin cups and fill them ¾ full.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
