Ingredients

Dry Ingredients

  • cups oat flour
  • cup rolled oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt

Wet Ingredients

  • 2 large eggs
  • 1 cup grated zucchini
  • 1 medium banana
  • 2 Tbsp unsweetened applesauce
  • 3 Tbsp coconut oil
  • ¼ cup honey
  • 1 tsp vanilla extract

Mix-Ins

  • ¼ cup mini dark chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, whisk together the oat flour, rolled oats, baking soda, cinnamon, and salt.
  3. In another bowl, combine the eggs, grated zucchini, mashed banana, applesauce, melted coconut oil, honey, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until just combined, being careful not to over-mix.
  5. Fold in the mini dark chocolate chips.
  6. Divide the batter evenly into 24 mini muffin cups or 12 regular-sized muffin cups.
  7. Bake for 15 to 17 minutes for mini muffins or 23 to 25 minutes for regular muffins, until a toothpick comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
