Instructions
- Preheat the oven to 350°F.
- In a bowl, whisk together the oat flour, rolled oats, baking soda, cinnamon, and salt.
- In another bowl, combine the eggs, grated zucchini, mashed banana, applesauce, melted coconut oil, honey, and vanilla extract.
- Mix the wet ingredients into the dry ingredients until just combined, being careful not to over-mix.
- Fold in the mini dark chocolate chips.
- Divide the batter evenly into 24 mini muffin cups or 12 regular-sized muffin cups.
- Bake for 15 to 17 minutes for mini muffins or 23 to 25 minutes for regular muffins, until a toothpick comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
