Ingredients

The main ingredients

  • 1 lb 93% Lean Ground Beef or Ground Turkey
  • 1 unit Onion, chopped
  • 1 unit Bay Leaf
  • ½ cup Celery, chopped
  • 1 Tablespoon Chili Powder, mild
  • 1 Tablespoon Cumin
  • 2 teaspoons Oregano, dried
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Chipotle Powder (optional, or cayenne pepper)
  • 1 ½ teaspoons Kosher Salt (or 1 tsp table salt)
  • ½ teaspoon Black Pepper
  • 4 cloves Garlic, minced
  • 2 ½ cups Beef or Chicken Broth
  • 1 (4 oz) can Green Chiles (mild, fire roasted are good)
  • 2 (15.5 oz) cans Red Kidney Beans (rinsed & drained)
  • 8 oz Elbow Pasta (macaroni)
  • ½ (15 oz) jar Roasted Red Bell Peppers, drained & chopped
  • 1 (14.5 oz) can Diced Tomatoes (juice and all)
  • 1 (15 oz) can Tomato Sauce

Optional ingredients for Cheesy Chili Mac

  • 2 ½ cups Sharp Cheddar Cheese, shredded

Instructions

  1. 1. Sauté the ground beef in the Instant Pot until almost cooked.
  2. 2. Add onion, bay leaf, and celery; sauté until translucent.
  3. 3. Stir in garlic and spices.
  4. 4. Add broth, chiles, and beans; let simmer.
  5. 5. Gently press the pasta into the mixture without stirring.
  6. 6. Cancel sauté mode and add red peppers, tomatoes, and tomato sauce on top without stirring.
  7. 7. Seal the pot and set to pressure cook for 4 minutes.
  8. 8. Perform a controlled quick release of steam once cooking is complete.
  9. 9. Open the lid, stir the contents, and add cheese if desired.
  10. 10. Season to taste and serve immediately.
