Ingredients

The chili

  • 2 teaspoons olive oil
  • 2 pounds ground beef
  • 1 medium onion
  • 1 ½ teaspoons minced garlic
  • 28 ounces diced tomatoes
  • 3 cans tomato sauce (8 ounces each)
  • ¾ cup beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 2 teaspoons cocoa powder
  • 1 teaspoon granulated sugar
  • 1 ½ teaspoons kosher salt
  • ¾ teaspoon ground pepper
  • 15 ounces kidney beans
  • 15 ounces pinto beans

Toppings

  • as desired shredded cheese
  • as desired tomatoes
  • as desired green onions
  • as desired sour cream

Instructions

  1. 1. Set the Instant Pot to Saute mode and add olive oil.
  2. 2. Brown the ground beef, breaking it up as it cooks.
  3. 3. Add diced onion and cook until softened.
  4. 4. Stir in minced garlic, diced tomatoes, tomato sauce, beef broth, and spices.
  5. 5. Add the drained beans to the mixture.
  6. 6. Seal the Instant Pot and set it to the Chili/Beans setting for 20 minutes.
  7. 7. Release the pressure and serve with assorted toppings.
