Ingredients

The soup

  • 2 cans (28 oz) Whole Plum or San Marzano Tomatoes
  • 4 Tbsp salted butter
  • 3 cloves garlic, minced
  • 2 cups Progresso™ Chicken Stock
  • ¼ cup chopped fresh basil
  • 1/3 cup heavy cream (optional)

Seasoning

  • to taste Salt and freshly ground black pepper (optional)

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Puree the canned tomatoes in a blender until smooth.
  3. Add garlic to the pot and sauté for 30 seconds.
  4. Pour in the pureed tomatoes and chicken stock, bringing it to a gentle bubble.
  5. Reduce heat and simmer for 10 minutes to thicken.
  6. Stir in half of the basil and season with salt and pepper if desired.
  7. Serve warm, drizzling each bowl with cream if using, and sprinkle with remaining basil.
