  • 1 medium shallot

Instructions

  1. Thinly slice the cucumbers and shallot.
  2. Add the sliced cucumbers and shallot to a jar or bowl.
  3. In a separate bowl, whisk together the rice vinegar, sugar, ginger, salt, and chili flakes until the sugar dissolves.
  4. Pour the mixture over the cucumbers and shallot, tossing to coat.
  5. Cover and refrigerate for at least 30 minutes before serving.
