Dairy-Free Broccoli Stem Soup

Instructions
- 1. Heat olive oil in a medium pot and add the onion, garlic, and broccoli stems. Season with salt and pepper.
- 2. Cook the vegetables for about 10 minutes until they are tender, stirring occasionally.
- 3. Pour in the chicken broth and remove from heat. Allow the soup to cool slightly.
- 4. Transfer the soup to a blender, filling it halfway to avoid overflow, and blend until smooth.
- 5. Taste and adjust seasonings as necessary. Add more broth if a thinner consistency is desired.
- 6. Serve and enjoy!
