Ingredients

  • 1 tbsp olive oil
  • ½ medium onion
  • 2 cloves garlic
  • 4-5 cups broccoli stems (from 1 large head of broccoli)
  • 3 cups low-sodium chicken broth
  • to taste salt
  • to taste pepper

Instructions

  1. 1. Heat olive oil in a medium pot and add the onion, garlic, and broccoli stems. Season with salt and pepper.
  2. 2. Cook the vegetables for about 10 minutes until they are tender, stirring occasionally.
  3. 3. Pour in the chicken broth and remove from heat. Allow the soup to cool slightly.
  4. 4. Transfer the soup to a blender, filling it halfway to avoid overflow, and blend until smooth.
