Ingredients

The potatoes and vegetables

  • 8 pieces red potatoes
  • 1 piece red pepper
  • 1 piece yellow pepper
  • 2 pieces small onions

The seasoning

  • 3–4 Tablespoons olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400 degrees.
  2. Dice the red potatoes, red pepper, yellow pepper, and onions into small, equal pieces and place them in a large bowl.
  3. Add olive oil and season generously with salt and pepper, then toss to coat the vegetables.
  4. Spread the mixture evenly on a baking sheet.
  5. Bake in the oven for 40-50 minutes, stirring halfway through to ensure even cooking.
  6. Remove from the oven and let sit for 5 minutes before serving.
  7. Season with more salt if needed and serve with eggs or sautéed turkey sausage.
