Ingredients

Berries

  • 4 oz blackberries
  • 4 oz raspberries
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar
  • to taste none powdered sugar, for dusting

Cake Batter

  • ¾ cup Greek plain yogurt
  • 3 large eggs
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup extra virgin olive oil

Instructions

  1. Combine blackberries, raspberries, lemon juice, and sugar in a bowl and refrigerate.
  2. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  3. In a bowl, whisk together yogurt, eggs, sugar, and vanilla.
  4. Add flour, baking powder, and salt, and mix until just combined.
  5. Fold in olive oil until the batter is thick and shiny.
  6. Pour the batter into the prepared pan and bake for 35–40 minutes until a toothpick comes out clean.
  7. Allow the cake to cool for 10 minutes before removing from the pan.
  8. Dust the top with powdered sugar and top with berries before serving.
