Ingredients

  • ¼ cup red onion, very finely diced
  • ½ a jalapeno, finely chopped
  • 2 tablespoon lime juice
  • ¼ teaspoon salt
  • 3–4 pieces Fuyu Persimmons, diced
  • ½–1 cup cilantro, chopped
  • ¼–½ cup pomegranate seeds (optional)

Instructions

  1. Chop the onions and jalapeno, then mix with lime juice and salt in a bowl.
  2. Dice the persimmons and chop the cilantro, then combine with the onion mixture.
  3. Taste and adjust salt and lime juice to enhance the flavor.
  4. Garnish with pomegranate seeds if desired.
