Ingredients

The salsa

  • 2 cups pomegranate arils
  • cup finely chopped red onion
  • ¼ cup finely chopped cilantro
  • 1 unit jalapeño pepper, seeded and finely chopped
  • ½ teaspoon lime zest
  • 2 tablespoons lime juice
  • teaspoon fine salt

Optional whipped goat cheese

  • 4 to 5 ounces goat cheese
  • 8 ounces cream cheese
  • 1 tablespoon honey
  • 1 small-to-medium garlic clove
  • teaspoon fine salt

Instructions

  1. Combine all salsa ingredients in a bowl and gently stir until mixed, adjusting salt to taste.
  2. For the whipped goat cheese, blend all ingredients in a food processor until smooth and creamy.
  3. Serve the salsa alone or spread the whipped goat cheese in a shallow bowl and arrange the salsa around it.
