Pomegranate Guacamole

Ingredients

  • 3 medium ripe avocados
  • 2 tablespoons fresh lime juice
  • ¼ cup diced red onion
  • ¼ cup fresh cilantro, chopped
  • 1 whole jalapeño, seeds removed and minced
  • 1 cup pomegranate arils
  • to taste Kosher salt
  • to taste black pepper

Instructions

  1. Cut the avocados in half and remove the seed.
  2. Scoop out the flesh into a medium bowl.
  3. Add lime juice, red onion, cilantro, and jalapeño to the bowl.
  4. Season with salt and black pepper, then mash the avocado to your desired consistency.
  5. Taste and adjust salt and pepper if necessary.
  6. Stir in the pomegranate arils.
  7. Serve immediately with Tostitos scoops.
