Pomegranate Guacamole with Fried Plantain Chips

Plantain Chips

Instructions
- In a bowl, combine avocado halves and lime juice, then mash lightly.
- Mix in cumin, jalapeño, cilantro, pomegranate arils, and salt. Stir in feta if using.
- For the plantain chips, mix chili powder and salt in a bowl.
- Heat oil in a skillet and fry plantain slices until golden.
- Smash the fried plantains into flat disks and fry again until crispy.
- Remove and sprinkle with chili salt. Serve with guacamole.
