Ingredients

Pomegranate Guacamole

  • 3 large ripe hass avocados
  • 1 large or 2 small limes
  • ½ teaspoon ground cumin
  • 1 large jalapeño
  • cup fresh cilantro
  • arils from 1 pomegranate
  • to taste salt
  • 4 ounces crumbled feta cheese (optional)

Plantain Chips

  • 4 inch yellow plantains
  • to fry amount oil
  • 1 tablespoon chili powder
  • 2 tablespoons sea salt

Instructions

  1. In a bowl, combine avocado halves and lime juice, then mash lightly.
  2. Mix in cumin, jalapeño, cilantro, pomegranate arils, and salt. Stir in feta if using.
  3. For the plantain chips, mix chili powder and salt in a bowl.
  4. Heat oil in a skillet and fry plantain slices until golden.
  5. Smash the fried plantains into flat disks and fry again until crispy.
  6. Remove and sprinkle with chili salt. Serve with guacamole.
