Ingredients

The guacamole

  • 3 large avocado
  • ½ cup papaya, diced
  • ½-1 cup pineapple, diced
  • ½-1 cup mango, diced
  • 1 clove garlic, minced
  • ¼ cup jalapenos, minced
  • ¼-½ cup red onion, minced
  • Juice of lime or lemon lime or lemon
  • ¼ cup cilantro, chopped
  • ¼-½ teaspoon cumin (optional)
  • 1 tablespoon olive oil, extra virgin
  • to taste salt

The plantain chips

  • 2-3 unripe plantains
  • to taste salt
  • to taste freshly ground pepper
  • for deep-frying oil

Instructions

  1. Scoop avocado into a bowl and mash until smooth with a fork, then add lime juice.
  2. In another bowl, mix pineapple, papaya, mango, garlic, onion, and cilantro gently.
  3. Combine the fruit mixture with the mashed avocado and adjust seasonings as needed.
  4. For plantain chips, preheat the oven to 400°F and prepare baking sheets.
  5. Peel and slice plantains thinly, then mix with salt and paprika.
  6. Bake plantains for 12-20 minutes, turning halfway, until golden brown.
  7. Alternatively, fry sliced plantains in hot oil until slightly brown, then drain on paper towels.
