Ingredients

  • 3 pieces ripe peaches, diced
  • 1 medium ripe mango, peeled and diced
  • ½ pint grape tomatoes, diced
  • ½ medium red onion, diced
  • 1 piece red bell pepper, seeded and diced
  • 1 piece jalapeño pepper, seeded and diced
  • 1 tablespoon honey
  • 1 piece lime, juiced
  • ½ cup cilantro, chopped
  • to taste salt
  • to taste black pepper

Instructions

  1. In a large bowl, combine the chopped peaches, mango, tomatoes, red onion, bell pepper, jalapeño, and cilantro.
  2. Add honey and lime juice, mixing well, then season with salt and pepper.
  3. Cover and refrigerate for 1-2 hours to let the flavors marinate.
  4. Taste and adjust seasoning with additional salt, pepper, or lime as needed.
