Strawberry Salad with Coconut Bacon

Ingredients

Coconut Bacon

  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon maple syrup
  • 1 ½ teaspoons liquid smoke
  • 1 ½ teaspoons water
  • 1 ½ cups unsweetened flaked coconut
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper

Black Pepper Vinaigrette

  • cup red wine vinegar
  • 1 teaspoon white sugar
  • ¾ teaspoon black pepper
  • ½ teaspoon minced garlic
  • ¼ teaspoon salt
  • cup olive oil

Salad

  • 1 5-ounce package herb blend salad greens
  • 2 cups sliced strawberries
  • ½ cup slivered almonds
  • ½ cup roasted salted pepitas
  • ¼ cup coconut bacon
  • to taste none coarse salt and black pepper

Instructions

  1. Preheat the oven to 325°F and prepare a baking sheet with parchment paper.
  2. In a bowl, mix tamari, maple syrup, liquid smoke, and water, then add coconut and stir until absorbed.
  3. Sprinkle smoked paprika and black pepper over the coconut, mix, and spread on the baking sheet.
  4. Bake for 10-15 minutes, watching closely until dark brown.
  5. For the vinaigrette, whisk together red wine vinegar, sugar, black pepper, garlic, and salt, then slowly add olive oil while whisking.
  6. In a large bowl, combine salad greens with salt and pepper, then add strawberries, almonds, pepitas, and coconut bacon.
  7. Toss the salad and divide onto plates, drizzling with vinaigrette and adding more coconut bacon if desired.
