Instructions
- Preheat the oven to 325°F and prepare a baking sheet with parchment paper.
- In a bowl, mix tamari, maple syrup, liquid smoke, and water, then add coconut and stir until absorbed.
- Sprinkle smoked paprika and black pepper over the coconut, mix, and spread on the baking sheet.
- Bake for 10-15 minutes, watching closely until dark brown.
- For the vinaigrette, whisk together red wine vinegar, sugar, black pepper, garlic, and salt, then slowly add olive oil while whisking.
- In a large bowl, combine salad greens with salt and pepper, then add strawberries, almonds, pepitas, and coconut bacon.
- Toss the salad and divide onto plates, drizzling with vinaigrette and adding more coconut bacon if desired.
