Unstuffed Cabbage Rolls

Ingredients

  • 1 Tbsp olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 ¼ lbs lean ground beef
  • 1 can (14.5 oz) diced tomatoes
  • ½ cup tomato sauce
  • ¼ cup chicken broth
  • ½ tsp paprika
  • ½ tsp thyme
  • ½ tsp marjoram
  • 1 Tbsp brown sugar
  • 1 Tbsp red wine vinegar
  • ½ medium head cabbage, chopped
  • 2 Tbsp minced fresh parsley
  • 1 ¼ cups brown rice or white rice, cooked

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Sauté onion for 2 minutes, then add garlic and sauté for an additional 10 seconds.
  3. Push the onion and garlic to one side of the skillet and add the ground beef, seasoning with salt and pepper.
  4. Brown the beef for about 3 minutes, then break it up and cook until fully cooked, about 4 more minutes.
  5. Drain excess fat, then add diced tomatoes, tomato sauce, chicken broth, paprika, thyme, marjoram, brown sugar, and red wine vinegar to the skillet.
  6. Bring the mixture to a simmer.
  7. Add chopped cabbage, season with salt and pepper, cover, and simmer until the cabbage is tender, about 15 minutes.
  8. Serve warm over cooked rice and garnish with parsley.
