Unstuffed Cabbage Rolls

brown rice or white rice, cooked
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Sauté onion for 2 minutes, then add garlic and sauté for an additional 10 seconds.
- Push the onion and garlic to one side of the skillet and add the ground beef, seasoning with salt and pepper.
- Brown the beef for about 3 minutes, then break it up and cook until fully cooked, about 4 more minutes.
- Drain excess fat, then add diced tomatoes, tomato sauce, chicken broth, paprika, thyme, marjoram, brown sugar, and red wine vinegar to the skillet.
- Bring the mixture to a simmer.
- Add chopped cabbage, season with salt and pepper, cover, and simmer until the cabbage is tender, about 15 minutes.
- Serve warm over cooked rice and garnish with parsley.
