Ingredients

  • 1 lb Ground Beef or Ground Turkey
  • 1 large Yellow Onion, chopped
  • 2 Bay Leaves
  • 4 large cloves Garlic, pressed or minced
  • 2 tsp Paprika
  • 1 ½ tsp Coarse Salt
  • 1 tsp Pepper
  • ¼ tsp Oregano
  • 1 small-med Head of Green Cabbage, chopped in 2" pieces
  • 3 ½ cups Beef Broth, low sodium
  • 1 Tbsp Balsamic Vinegar
  • 1 Tbsp Worcestershire Sauce
  • 1 cup Long Grain White Rice, rinsed, uncooked
  • 1 (14 oz) can Diced Tomatoes, with juice
  • 1 Tbsp Tomato Paste
  • 2 tsp Sugar

Instructions

  1. Prepare all vegetables and ingredients.
  2. Turn on the Sauté setting of the Instant Pot and brown the ground beef or turkey.
  3. Add onions (and olive oil if using turkey) and sauté until translucent.
  4. Add bay leaves and garlic, sauté for an additional minute.
  5. Stir in paprika, salt, pepper, oregano, cabbage, broth, balsamic vinegar, and Worcestershire sauce, then heat for a few minutes.
  6. Add the rice and stir well.
  7. Layer the diced tomatoes, tomato paste, and sugar on top without stirring.
  8. Seal the lid and set the steam release knob to Sealing.
  9. Cancel the Sauté function and select Pressure Cook/Manual for 4 minutes.
  10. After cooking, let the pot sit for 5 minutes for natural release, then perform a controlled Quick Release.
  11. Once the pin drops, open the lid and stir the contents.
  12. Taste and adjust seasoning if necessary, then serve.
