Stuffed Cabbage Rolls

Ingredients

The filling

  • lbs Ground beef
  • 1 cup Cooked rice
  • 1 cup Yellow onion (diced)
  • 2 cloves Garlic (minced)
  • 1 large Egg
  • 3 tbsp Parsley (divided)
  • ½ tbsp Sea salt
  • ½ tsp Black pepper

The cabbage and sauce

  • 1 head Cabbage
  • 2 cups Tomato sauce (divided)

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Boil a large pot of water and add the cabbage, boiling for 5 minutes until leaves are soft.
  3. In a bowl, combine ground beef, cooked rice, onion, garlic, egg, 2 tablespoons of parsley, sea salt, and black pepper, mixing until just combined.
  4. Spread 1 cup of tomato sauce on the bottom of a baking dish.
  5. Once cooled, cut the leaves from the cabbage core and remove the thick rib in a V shape.
  6. Divide the meat mixture into 12 portions and shape each into a log at one end of a cabbage leaf, then roll up.
  7. Place each roll seam side down in the baking dish over the sauce and spoon the remaining sauce over them.
  8. Cover the dish and bake for 60-75 minutes until the beef is cooked through, garnishing with the remaining parsley.
