Low Carb Keto Cabbage Rolls

Ingredients

The filling

  • 1 lb Ground beef
  • 1 14.5-oz can Diced tomatoes (drained)
  • 1 large Egg
  • 4 cloves Garlic (minced)
  • 2 tsp Italian seasoning
  • 1 tsp Sea salt
  • ¼ tsp Black pepper
  • 1 cup Cauliflower rice

The cabbage and sauce

  • 1 head Cabbage
  • 1 15-oz can Tomato sauce

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Boil a large pot of water and add the cabbage, boiling for 5-8 minutes until leaves are soft.
  3. Remove cabbage and set aside to cool.
  4. Stir fry the cauliflower rice for a few minutes.
  5. In a bowl, combine ground beef, diced tomatoes, egg, minced garlic, Italian seasoning, sea salt, and black pepper. Mix and fold in the cooked cauliflower rice.
  6. Spread half of the tomato sauce in a baking dish.
  7. Peel the cabbage leaves carefully and cut the thick rib from each leaf.
  8. Place ⅓ cup of the beef mixture at one end of a cabbage leaf, fold in the sides, and roll up.
  9. Place the rolls seam side down in the baking dish. Repeat to make 12 rolls.
  10. Spoon the remaining tomato sauce over the rolls and cover with foil.
  11. Bake for 1 hour or until the beef is cooked through.
