Low Carb Keto Cabbage Rolls

Instructions
- Preheat the oven to 350°F (177°C).
- Boil a large pot of water and add the cabbage, boiling for 5-8 minutes until leaves are soft.
- Remove cabbage and set aside to cool.
- Stir fry the cauliflower rice for a few minutes.
- In a bowl, combine ground beef, diced tomatoes, egg, minced garlic, Italian seasoning, sea salt, and black pepper. Mix and fold in the cooked cauliflower rice.
- Spread half of the tomato sauce in a baking dish.
- Peel the cabbage leaves carefully and cut the thick rib from each leaf.
- Place ⅓ cup of the beef mixture at one end of a cabbage leaf, fold in the sides, and roll up.
- Place the rolls seam side down in the baking dish. Repeat to make 12 rolls.
- Spoon the remaining tomato sauce over the rolls and cover with foil.
- Bake for 1 hour or until the beef is cooked through.
