Ingredients

Cheesecake Ingredients

  • 2 cups almond meal
  • 6 Tablespoons melted butter
  • 3 8-ounce bricks neufchatel cream cheese
  • 1 cup granulated sugar
  • 1 cup plain or vanilla Greek yogurt
  • ¼ cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 3 large eggs

Samoa Topping Ingredients

  • ½ cup Blue Diamond almonds
  • ½ cup semisweet or dark chocolate chips
  • ½ cup toasted flaked or shredded coconut

Chocolate Ganache Ingredients

  • 6 ounces semisweet or dark chocolate
  • ¼ cup almond or 2% dairy milk
  • 2 tablespoons butter or coconut oil

Instructions

  1. Preheat the oven to 325°F and prepare a 9-inch springform pan with aluminum foil.
  2. Mix almond meal and melted butter, then press into the bottom of the pan.
  3. Prepare a water bath by placing the springform pan in a larger pan and boiling water.
  4. Beat cream cheese until smooth, then add sugar and mix well.
  5. Incorporate Greek yogurt, cocoa powder, vanilla, and almond extract, mixing until smooth.
  6. Add eggs one at a time, mixing on low speed after each addition.
  7. Pour the cheesecake batter into the crust and place in the oven.
  8. Pour boiling water into the larger pan to create a water bath and bake for about 1 hour 15 minutes.
  9. Turn off the oven and let the cheesecake set for 1 hour with the door slightly open.
  10. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  11. Spread chocolate ganache over the chilled cheesecake and top with almonds, chocolate chips, and coconut.
  12. Drizzle remaining ganache over the top before serving.
