Ingredients

The base

  • 1 cup shredded coconut (unsweetened)
  • cup almond meal (almond flour)
  • ¼ cup coconut oil
  • cup almond butter
  • ¼ cup honey (or maple syrup for vegan)
  • ¼ cup raw sliced almonds
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

The chocolate drizzle

  • ½ cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Spray a loaf pan with coconut oil and set aside.
  2. Melt coconut oil and almond butter in a bowl in the microwave, stirring until smooth.
  3. Add honey and vanilla to the mixture and stir until combined.
  4. Mix in shredded coconut, almond meal, and sliced almonds until the mixture forms a ball.
  5. Pour the mixture into the prepared loaf pan and spread it out evenly.
  6. For the chocolate drizzle, melt dark chocolate chips and coconut oil in the microwave, stirring until smooth.
  7. Pour the chocolate drizzle over the coconut almond mixture and spread evenly.
  8. Optional: Top with chopped raw almonds or toasted coconut.
  9. Refrigerate until the topping is set, then serve.
