Ingredients

  • 4 large eggs
  • ¾ cup full fat coconut milk
  • 1 teaspoon almond extract
  • ¾ cup coconut sugar
  • ½ cup blanched almond flour
  • ½ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ¼ cup unsweetened shredded coconut
  • ¾ cup chocolate chips

Instructions

  1. Whisk together eggs, coconut milk, almond extract, and coconut sugar in a large bowl.
  2. In a small bowl, combine almond flour, coconut flour, salt, and baking soda.
  3. Mix the dry ingredients into the wet ingredients using a hand blender.
  4. Stir in ½ cup of the chocolate chips.
  5. Transfer the batter to a greased 8 x 8 inch baking dish.
  6. Sprinkle shredded coconut and remaining chocolate chips on top.
  7. Bake at 350°F for 30 minutes.
  8. Cool for 1 hour before serving.
