Instructions
- Prepare a sheet pan by lining it with parchment paper.
- In a food processor, blend the shredded coconut, coconut oil, maple syrup, vanilla, and sea salt until the mixture resembles shaved ice.
- Scoop the coconut mixture and form it into 1-inch balls, placing them on the prepared sheet pan.
- Freeze the balls for 15 minutes while melting the chocolate over a double boiler on low heat.
- Dip each ball in the melted chocolate using a fork, draping the chocolate over with a spoon, then place them back on the parchment paper.
- Chill the almond joy bites until hardened, then serve at room temperature.
