Ingredients

The filling

  • 3 ¼ cups unsweetened shredded coconut
  • ¼ cup coconut oil
  • ¼ cup pure maple syrup
  • ½ tsp vanilla extract
  • 1 pinch sea salt
  • ¼ cup sliced almonds, roughly chopped

The chocolate coating

  • 1 ½ cups dairy free chocolate chips or dark chocolate

Instructions

  1. Prepare a sheet pan by lining it with parchment paper.
  2. In a food processor, blend the shredded coconut, coconut oil, maple syrup, vanilla, and sea salt until the mixture resembles shaved ice.
  3. Scoop the coconut mixture and form it into 1-inch balls, placing them on the prepared sheet pan.
  4. Freeze the balls for 15 minutes while melting the chocolate over a double boiler on low heat.
  5. Dip each ball in the melted chocolate using a fork, draping the chocolate over with a spoon, then place them back on the parchment paper.
  6. Chill the almond joy bites until hardened, then serve at room temperature.
