Almond Joy Energy Bites

Ingredients

  • 12 oz. Medjool dates
  • 2 cups almonds
  • ½ cup shredded coconut
  • ½ cup unsweetened cocoa powder
  • 1 Tbsp. coconut oil
  • 1 Tbsp. vanilla extract
  • ½ tsp. almond extract (optional)

Instructions

  1. Combine dates and remaining ingredients in a food processor.
  2. Pulse to mix, then scrape down the sides.
  3. Blend for about 3 minutes until the mixture clumps together.
  4. Measure out a tablespoon of the mixture and roll into a ball.
  5. Optionally, roll the balls in coconut flakes.
  6. Repeat with the remaining mixture or press into a baking dish to cut into bars.
  7. Store in an airtight container for up to 2 weeks.
