Healthy Dark Chocolate Almond Joy Bites

Ingredients

  • 6 ounces pitted Medjool or other soft dates
  • 1 cup unsalted, whole almonds
  • ½ cup shredded coconut
  • ½ cup natural, unsweetened or Dutch-process cocoa powder
  • 1 to 2 tablespoons extra-virgin coconut oil
  • ½ tablespoon vanilla extract
  • a pinch salt

Instructions

  1. Combine all ingredients in a food processor and process until finely chopped and crumbly.
  2. If the mixture is too crumbly, add a tablespoon of water or melted coconut oil and process again.
  3. Roll the mixture into tablespoon-sized balls.
  4. Enjoy immediately or store in the refrigerator for up to a week.
