No-Bake Almond Joy Granola Bars

Instructions
- Line an 8-inch or 9-inch square pan with parchment paper.
- In a large bowl, combine the oats, rice crisp cereal, sliced almonds, coconut, and chia seeds.
- Melt the coconut oil in a medium pot over low heat, then remove from heat and stir in the almond butter, coconut nectar, and vanilla until smooth.
- Pour the wet mixture over the dry ingredients and mix until well combined. Add salt to taste.
- Spread the mixture into the pan without packing it down, then sprinkle chocolate chips on top.
- Lightly wet your hands and press the mixture down evenly. Use a pastry roller to pack it in more tightly.
- Freeze for about 10 minutes until firm, then slice into bars and store in the fridge or freezer.
