Ingredients

  • 2 cups old fashioned oats
  • ½ cup sliced almonds
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 4 tablespoons coconut oil, melted
  • ½ cup pure maple syrup
  • teaspoons vanilla extract
  • cup unsweetened coconut flakes
  • ½ cup dark chocolate chunks

Instructions

  1. Preheat the oven to 325ºF.
  2. In a large bowl, combine oats, sliced almonds, brown sugar, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix melted coconut oil, maple syrup, and vanilla extract until combined.
  4. Pour the wet mixture over the dry ingredients and toss until everything is coated.
  5. Spread the granola mixture on a baking sheet lined with parchment paper.
  6. Bake for 30 minutes, stirring every 10 minutes to prevent burning.
  7. Once baked, remove from the oven and let it cool completely.
  8. Mix in the coconut flakes and dark chocolate chunks after cooling.
