Ingredients

The dry ingredients

  • 2 cups old fashioned oats
  • ½ cup sliced almonds
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

The wet ingredients

  • 4 tablespoons coconut oil, melted (or butter)
  • ½ cup pure maple syrup
  • teaspoons vanilla extract

Instructions

  1. Preheat the oven to 325ºF.
  2. In a large bowl, combine the dry ingredients: oats, sliced almonds, brown sugar, cinnamon, nutmeg, and salt.
  3. In a small bowl, mix the wet ingredients: melted coconut oil, maple syrup, and vanilla extract, whisking until combined.
  4. Pour the wet mixture over the dry mixture and toss to coat.
  5. Spread the granola mixture onto a baking sheet lined with a silicon baking mat or parchment paper.
  6. Bake for 30-40 minutes, stirring every 10 minutes, until the granola is slightly browned.
  7. Remove from the oven and let cool.
