Easy Homemade Granola

Ingredients

The granola base

  • 2 cups old-fashioned oats
  • ¾ cup chopped almonds
  • ¼ cup pepitas (shelled pumpkin seeds)
  • ¼ cup ground flaxseed
  • 2 tbsp brown sugar
  • ¼ tsp salt
  • ½ tsp cinnamon

The liquid mixture

  • 2 tbsp coconut oil
  • 2 tbsp honey
  • 1 tsp vanilla

The dried fruit

  • ½ cup raisins or dried cranberries

Instructions

  1. Preheat the oven to 300°F.
  2. In a large bowl, combine the oats, almonds, pepitas, flaxseed, brown sugar, salt, and cinnamon.
  3. In a small bowl, microwave the coconut oil and honey until melted, then stir in the vanilla.
  4. Pour the liquid mixture over the dry ingredients and mix well.
  5. Spread the mixture evenly on a baking sheet.
  6. Bake for about 35 minutes, stirring every 10 minutes.
  7. Remove from the oven and stir in the raisins, then let cool completely before storing.
