Ingredients

Wet Ingredients

  • ½ cup pure maple syrup
  • ¼ cup raw honey
  • 2 tsp pure vanilla extract

Dry Ingredients

  • 3 cups gluten free rolled oats
  • 1 cup sliced raw almonds
  • ½ cup puffed quinoa
  • ½ cup dried bananas, slightly crushed
  • 1 tsp ground Ceylon cinnamon
  • ¼ tsp salt
  • ¼ tsp ground nutmeg

Add-ins

  • ¾ cup chopped pitted dates
  • ½ cup raisins
  • cup unsweetened toasted coconut flakes

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. Combine all dry ingredients in a large mixing bowl and set aside.
  3. In a small saucepan, heat the wet ingredients until simmering.
  4. Pour the hot syrup over the dry ingredients and stir until evenly coated.
  5. Spread the mixture in an even layer on the baking sheet and bake for 20 minutes, stirring once halfway through.
  6. After 20 minutes, add the chopped dates, raisins, and shredded coconut, and bake for an additional 8 to 10 minutes until golden brown.
  7. Allow the granola to cool completely in the pan before storing in an airtight container.
